Loaded Cauliflower Casserole

1 large head of cauliflower cut into bite-size pieces, about 6 C

6 to 8 strips of bacon, cooked and crumbled

6 Tbsp chopped chives

½ C mayonnaise

½ C sour cream

2 C Cheddar cheese

Preheat oven to 425 degrees. In a large pot bring cauliflower to a boil. Cook for 8 to 10 minutes. Drain cauliflower and set aside to cool. Combine 1 cup Cheddar cheese, half of the crumbled bacon, half of the chives, sour cream, mayonnaise and cauliflower. Mix well.

Place the mixture into a baking dish and sprinkle the rest of the cheese and bacon on top. Bake for 15 to 20 minutes so the cheese is melted. Sprinkle the remainder of the chives on top and serve. Recipe courtesy of naturallycracked.com.
