To the editor:
I give UW System President Ray Cross credit for trying (with the Wisconsin Dairy Summit), and that’s a big step.
However, I only think one speaker said anything new. John Umhoefer, executive director of the Wisconsin Cheese Makers Association, actually said what has to be done. The consumer is always right, even when they are misguided or misinformed.
The dairy industry in the U.S. has taken “nature’s most nearly perfect food” and improved it to the point most health professionals won’t recommend you consume it. Most mothers don’t want their kids to consume it. So hardly anyone does use dairy products.
Now we have the producers brainwashed to spend money, produce more and the increased efficiency will carry the day. The dairy industry has evolved to the highest cost of production in the world, way more production than demand, and all this in a bubble economy.
The real scary part of this is the dairy industry is only one minute part of the problem. There are easy solutions to the dairy industry’s problems. They never get used because we want the government to do it (socialism). The only way to fix things in dairy or any other industry is capitalism. In blunt terms, get the government and government programs out.
